From what I see online it appears that soccer is one of the highest backed sports in terms of betting, needless to say horse racing is aswell, but what other sports do you bet on?

I thought soccer would be at #1. Out of all these sports which do you feel offers the highest returns? I have not bet on much outside of horse racing as I am familiar with it and experienced.

i usually on bet on Boxing.. haha.. probably the most crooked of all sports.. Dela hoya is a 2-1 underdog, and he gets my money

From highest returns to lowest:
Baseball - MLB
Soccer - the major and minor leagues worldwide
Tennis - ATP and WTA
College football - NCAAF
College basketball - NCAAB
Hockey - NHL
Basketball - NBA*
Football - NFL*

Other notables (smaller volumes/turnover but still profitable):
Basketball - NBL and the Euroleagues
Australian rules - AFL
Rugby - Super 14, NRL

*I find NBA and NFL very hard to beat consistently; NBA due to extremely efficient market, NFL due to limited number of games per season

x games, Now that an interesting one. For now I will stick with what I know which is horse racing, might venture into rugby, I know the sport so would have a better chance with these than with a new one.
